There are so many things that you can do with this. I designed it originally when I was working on building ArcadeBoy. The mainboard for Arcade boy is slightly different to accommodate my specific build requirements but you could easily use this board to design your own. My plans for the board are to design a case for it so that you can mount both this adapter and the Gameboy mainboard.
